LATIN NAME: Origanum vulgare subsp. hirtum (O. heracleoticum)
BRIEF DESCRIPTION: A stand of aromatic oregano puts on a show of dainty white flowers among its aromatic leaves from July to September. Plants grow 1 to 2 feet tall and wide, and demand a place in every culinary herb garden. Greek oregano is widely believed to have the best flavor, but plants often are mislabeled. Buy from a reliable mail-order source or brush a leaf gently with your finger to test the scent when buying locally.
Every lover of Italian and Greek cooking knows the flavor and charm of oregano, which enhances tomato sauces and also bean, egg, and cheese dishes, many meats, marinated vegetables, and dressings. Its flavor combines well with garlic, thyme, basil, parsley, and olive oil.
